What do you do as a head chef? The Head Chef is in control in the kitchen. They preside over every aspect of what is going on. They manage the workers by delegating jobs, they create and update the menus, order supplies and manage the kitchens budgets and costs.

Executive Chef

What is the role of an executive chef? An Executive Chef takes on more of a managerial role. They are the top of the kitchen hierarchy and have Head Chefs working below them. Like the Head Chef, they create and update menus, take care of costing for the kitchen but are much less likely to be found involving themselves with the cooking.

It is often, that an executive chef will be employed to manage several kitchens or a large, busy kitchen. This allows for the Head Chefs to concentrate on the food rather than the finance. That given, they will work closely together when deciding menus.

What is an Executive Chef?

There are many different types of chefs, from Head Chefs to Sous Chefs, Pastry Chefs to Commis Chefs, and they all have their place in the kitchen. Another term you may have heard bounced around the kitchen, is ‘the Executive Chef’.

Here at MLS Steakhouse, we have an Executive Chef, but what is his role, and where does it differ?

Our Executive Chef Krishna Murthy, came to us from IHG (Intercontinental Hotel Group). Making this bold decision to join a small outfit such as ours was a blessing and he has since overseen the and cofounded, Marble, Arcadian and now MLS Steakhouse. All this, in just the short space of 9 months and during the COVID-19 pandemic.

It is a blessing for us to have him on board, and everything you see, eat and experience in our restaurants is a result of Krishnas culinary genius.
